A rant and a recipe!

Well, where do I even begin? Let’s just say for every one paleo meal I’ve had the past three weeks I’ve probably had two donuts. No, I haven’t been experimenting with paleo donut recipes…I’ve all but flipped the bird to my paleo ways and have definitely increased Krispy Kreme’s profit margins. I’m not proud, my thighs aren’t too excited either, and my stomach freaking hates me. I was doing well on zone and then life happened and rather than embracing it and overcoming it, I was a total stereotypical girl and ate my feelings. Every blessed one of them. So. That happened. Let me tell you just a few things that have been bothering me:

– My foot, which has made me a crappy runner, which then makes me sad….enter donut

– The season premiere of SOA….enter donut

– The guy that told me “You just aren’t built to run” as if my thunder thighs hadn’t tipped me off….ran anyway….then donuts

– Zone diet stress….eat a ton of veggies….enter donut

– skinny girls in high schools that I visit truly believing they are fat and being really distraught over it…..enter donut

– overweight kids in high schools that I visit truly believing there is no hope to get healthy so they just binge and binge…..enter donut

– boys…..enter donut

-just liking donuts…..enter donut

So. There it is in black and white. I’ve come clean and now I need to get my act together because while I’m still eating clean sans donut…my body hates it, stomach aches, breaking out like a high school freshman, and just feeling bloated which just makes me cranky. Cranky Christina is NEVER a good Christina.

Now that I’ve been a total ray of sunshine….let me assure you. I’m better now. I’m not cranky. And I’m donut free….although, there was a close call at bible study. I realize food doesn’t define me. The scale can suck it. And I like having big ol tree trunk legs. Life is actually really awesome, I have amazing family and friends, I have a job and a home, I get to work with some pretty awesome people, my capstone family ceases to amaze me, and I’ve been PRing my squats. God is good, I just have to get out of my own defeating mind and recognize all of the blessings that surround me every day. And to do that, I don’t need a stinking donut.

sweet pot cake

Chili Bacon Sweet Potato Hash Browns

2- medium sweet potatoes

6- strips of bacon (crumbled)

3- eggs

1 tsp chili powder

1 tsp garlic powder

1/2 tsp red chili flakes

1/2 tsp onion powder

salt & pepper

In a large pan cook bacon until it’s crispy, remove, keep grease in the pan you’re going to need it! Peel and shred your sweet potatoes (I used my food processor to shred them). In a large bowl combine sweet potatoes, eggs, chili, onion, and garlic powder, chili flakes, and crumbled bacon. heat your pan with bacon grease to med/high. Scoop sweet potato mixture in to pan and flatten into hash brown cakes (I used an ice cream scoop so that they could all be the same size). Cook on each side for 5-6 minutes. If your cakes are turning out darker than preferred turn down your heat. You want to make sure they’re cooked through so I’d stick with 5 or more min per side. I ate mine with an egg in between them! Yum!


Paleo fudge makes everything better….

Every time I’ve posted the past couple of months I’ve started off with an apology for not posting in a while, then I followed up with a promise to post more often.  Let’s go ahead and pretend I’ve already done that so we can fast forward to the good stuff.  Deal? Deal!

Where do we even begin? Life has been so crazy, break ups, make ups, crossfit, and job changes.  Well, there wasn’t really a make up. But there was a break up.  It was the right thing and I still think the world of Blaze and his family.  Sometimes things don’t work out between two good people and that’s all there is to say about that.  I know the Lord has great things in store for us and we just need to follow His will and not our own.  So that’s what is happening.  Moving on.

As for crossfit, have you found a box yet?  I’ve had friends from Idaho, Delaware, Massachusetts, Florida, Missouri, and Indiana all start crossfit and send me messages to ask questions or let me know how it’s going for them.  Those messages are my favorite.  Just knowing people are stepping outside of their comfort zone and bettering themselves makes my heart happy.  Sure, there are days when wall balls are the last thing you want to do (I like to call those days, every day) but  you’re there, you’re working hard, and you’re getting stronger and THAT is all that matters. AND you’re just a few workouts away from your booty looking a lot better…..I call that a win.

I’ve started zoning my paleo with a group of my teammates.  Basically I figured out I was not eating enough. Which is crazy because I feel like I eat all of the time, it has taken me two full weeks to get all 12 blocks figured out and eaten.  Crazy right?  If you’ve never tried zone before, it’s definitely a commitment, you have to weigh and measure, I bought a food scale. Who the heck am I? Anyway, I’m still figuring it out and will keep you posted, because obviously you’re interested, right? Duh.

Two weeks from now I’ll be cruising with my family and sweet friends.  I probably shouldn’t eat any more paleo fudge until then.  Who am I kidding, we all know I am going to.  You should eat some too.  It’s so easy to make you are going to die.  Actually, don’t die.  But make this fudge.





Paleo Fudge

1/2 cup almond butter

1/4 cup coconut oil

1/4 cup honey

1/4 cup cocoa powder

1/4 cup unsweetened coconut flakes

1/4 tsp vanilla

1/2 cup Enjoy Life chocolate chips


Put almond butter, coconut oil, and honey in a microwave safe bowl and microwave for 1-2minutes, until they are all melted.  Mix well. Add cocoa, coconut flakes, vanilla, and chocolate chips.  Mix well and pour in to a greased (I used coconut oil) dish.  Obviously the bigger the dish, the thinner the fudge, I used a loaf pan.  Put your fudge in the refrigerator for at least an hour to let it set and then it’s ready to enjoy!  I recommend keeping the fudge in the fridge because it melts quickly.  This recipe doubles and triples well.
